The kids and I make breakfast for dinner when dad is gone on business trips. We spent one summer when he was out of town making and taste testing pancake recipes. (Whole wheat pancakes from America’s Test Kitchen was the winner, if your curious.)
But here is a breakfast for dinner that even he loves. Huevos Raancheros.
I won’t claim that this is authentic. We prefer flour tortillas and re-fried beans. But it is quick and delicious. Bonus – very minimal cooking equals not heating up the kitchen in the summer!
And the kids made it… sans help.
Huevos Rancheros

Ingredients
- 2 cups salsa
- 16-ounce can refried beans
- 4 round corn or flour tortillas (we used whole wheat)
- butter spray or 2T olive oil
- 4 large eggs
- 1/2 cup crumbled cotija (or feta) cheese
- optional additional garnish and toppings- chopped fresh cilantro, lettuce/baby spinach, sliced/diced avocado or guacamole, sliced jalapeno, fresh corn
Instructions
- Warm tortillas in microwave for 10 seconds each
- Spread 1/4 of the re fried beans on the tortilla
- Top with cheese and salsa
- Add garnishes
- Fry eggs in butter spray or olive oil
- Add eggs to the top of the garnishes
