Horchata is normally made with rice. Soaking the grains in water and blending the resulting starchy liquid with sweetener and cinnamon. For a healthier version, I used oats. The kids love this and have been drinking it down faster than I can make it (score!).

Ingredients
- 1 cup old fashioned oats
- 4 cups water
- 1 teaspoon cinnamon (or to taste)
- stevia to taste (I used ~1/8 teaspoon concentrated stevia powder)
Instructions
- Combine all ingredients in the blender, let sit and the oats soak for 30 minutes to 1 hour.
- Blend on high for 1 minute
- Strain though a fine mesh strainer, discard solids (optional – I found it was find as long as you stirred the mixture before serving)
- Serve over ice.
