Brew some coffee, whip up the oatmeal. Then pop it in the oven and read your book while sipping said coffee until you (have to) get the kids up.

Apple Cinnamon Baked Oatmeal

Ingredients
- 2 cups old-fashioned rolled oats
- 1/4 cup ground flax (optional)
- 1/4 cup light brown sugar
- stevia to taste (I used 8 packets)
- 1/2 cup raisins or dried cranberries (optional)
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 2 eggs
- 2 cups milk
- 1 teaspoon vanilla extract
- 4 tablespoons coconut oil, melted
- 2 apples cut into 1/2-inch chunks (~2 cups, I use any apples we have, but Granny Smith work well)
Instructions
- Preheat the oven to 325°F.
- Microwave chopped apples on high for 2 minutes (depending on microwave strength), until softened
- In a bowl, combine the oats, brown sugar, stevia, raisins, baking powder, cinnamon and salt. Mix well.
- In another bowl, whisk eggs to pale yellow, then whisk in the milk, vanilla, and melted coconut oil until well combined.
- Add the wet ingredient mixture to the dry ingredients, stir to combine, then add in cooked apples. .
- Pour the oatmeal mixture into baking 9 inch baking dish and spread evenly. Bake for 40-45 minutes, until the top is golden and the oats are set.
- Serve warm.
